PITTSFIELD -- One after another, Kathy Lloyd, who co-owns the food truck How We Roll with her husband, Gabe, dropped egg rolls into the deep fryer for her curious customers.
On Thursday, customer Ashley Cirullo ordered an egg roll stuffed with macaroni and cheese and another stuffed with banana, Nutella, and peanut butter. Despite a steady drizzle that afternoon, Cirullo returned with a co-worker, who ordered $32 worth of egg rolls.
"It's just comfort food, it's good," said Cirullo, who learned about the food truck from co-workers who gave it rave reviews.
The Pittsfield couple started the business in March and have happily discovered a demand for traditional meals stuffed in deep-fried egg roll wrappers. The truck is parked outside Berkshire Medical Center and operates on Monday, Wednesday, Thursday and Friday during lunch hours through 4 p.m.
The menu changes daily, but so far egg rolls have been stuffed with shepherd's pie, spaghetti and meatballs and the French dish duck confit.
"It's beautiful, good food in an egg roll," describes Lloyd, who added that it's a great meal in a single bite .
Three hours is all it took for the food truck to sell out Friday of the Hipster Elvis [stuffed with banana, Nutella, and peanut butter] and two other egg roll options, one stuffed with chicken pot pie.
The food truck advocates a farm-to-table approach that includes using local meats and vegetables. The egg rolls are $2.50 each.
"If we can't find it locally, we try to buy it organic," said Lloyd, who will be graduating with a bachelor's degree in biology in May from MCLA.
The idea of wrapping meals in egg roll wrappers originated in a dream, she said.
"In my dream I was fist-fighting [a friend] for his idea," Lloyd said.
She pitched the idea to her husband and they scrapped plans to start a food truck based on recipes learned while living in Louisiana. "Maybe I am a little too in love with my own idea," she said. "The food works so well in this form ... We're living the dream."
