Mojito Madness Bars

Serves 9 or more

Crust:

1 cup flour

1/2 teaspoon salt

2 tablespoons finely chopped fresh mint

1/4 cup powdered sugar

1/2 cup very cold butter

Fromage blanc layer:

7 1/2 ounces Bellwether Farms Fromage Blanc

1 egg

1 tablespoon rum

1/2 cup sugar

Lime layer:

2 eggs

Grated zest of 3 limes

3 tablespoons fresh lime juice

1 cup sugar

1. Preheat oven to 350 degrees.

2. In a food processor, pulse flour, salt, mint and powdered sugar just to mix. Cut butter into tablespoon-size pieces; add to food processor. Pulse until butter is size of peas. Pat dough into a 9-by-9-inch baking pan; bake 15 to 20 minutes, or until light brown.

3. Meanwhile, make the fromage blanc layer: Mix cheese, egg, rum and sugar in small bowl until well blended.

4. Using a food processor, pulse the lime layer ingredients until well blended.

5. When crust is done, spread with fromage blanc mixture. Gently pour lime mixture on top.

6. Reduce oven temperature to 325 degrees; bake for 30 minutes, or until set. Refrigerate until chilled. Sprinkle with powdered sugar (or mint-infused powdered sugar) and cut into bars.
