QUINOA PANCAKES

Serves 4

3/4 cup ground raw quinoa or quinoa flour

2 teaspoons baking powder

1/2 teaspoon salt

1 egg white

1 egg

4 tablespoons butter, melted

1/4 cup milk or buttermilk

2 tablespoons maple or agave syrup

1 cup cooked quinoa

1. Mix all dry ingredients.

2. In a separate bowl, beat egg white to semi-stiff peaks.

3. In a separate bowl, mix whole egg, butter, milk and syrup.

4. Mix dry ingredients with the butter-milk mixture until well incorporated. Add cooked quinoa. Fold in beaten egg white.

5. Spoon onto hot, greased griddle and cook until golden brown, flipping halfway through. Serve warm with fresh fruit.
