Well, it looks like we're in the midst of "Those Lazy, Hazy, Crazy Days of Summer," everybody!
Yes, it's "Summertime" and you can have some "Hot Fun in the Summertime" when it's "Summer in the City" and if you get the "Summertime Blues," just remember, there is always a "Summer Breeze" "In the Summertime" but, oh, the "Summer Nights." If only it could be an "Endless Summer."
Admit it! You all have some funky little song from summers past that sends your thoughts back to the summer you first heard it.
I have to give credit where credit is due for my list of summer anthems. Nat King Cole made "Those Lazy, hazy, Crazy Days of Summer" famous way back in the day and "Summertime" is from the musical version of "Porgy and Bess." A little before my time is "Summertime Blues" by Eddie Cochran, who was a 1950s rocker well worth checking into. Now, from my summers past, "Summer in the City" by the Lovin Spoonful back in the '60s and "Hot Fun in the Summertime" by Sly and the Family Stone as we move into the '70s. Seals and Crofts did "Summer Breeze," an easy-going summery song; but my favorite feel-good summer tune is "In the Summertime" by Mungo Jerry. I think that was a one hit wonder, but it has a nifty rhythm — doot da doot, da da dada da da da. Is there any debate that the Beach Boys created the ultimate sounds of summer? "Endless Summer" is an album from 1974 that compiles the Beach Boys' early hit songs all about surfin' and summer. And without "Grease," there'd be no "Summer Nights."
Ice cream is the quintessential treat to cool off in the summer, so here is an incredibly easy recipe for delicious homemade lemon ice cream that doesn't require an ice cream maker. You'll scratch your head at this one because it involves stirring lemon juice into heavy cream. You would expect the cream to curdle, but it doesn't. Milk curdles; heavy cream will not because of the high fat content. So no trying to substitute low fat milk; it won't work. Splurge and enjoy this rich, calorie and fat laden ice cream....it's worth it!
Grated zest of one lemon
1/3 cup of fresh squeezed lemon juice (no bottled juice, please!)
1 cup sugar
2 cups of heavy cream
Combine ingredients and stir until sugar is dissolved. Pour into a container and freeze until it is firmed up and scoop-able. That's it!
