Good morning, foodie friends.

I don’t know about you, but sometimes I just don’t feel like cooking. I’m not sure I’m allowed to say that in this forum, (shhh … don’t tell my boss), but if I’m completely honest, there’s usually one week or so out of every month, I feed my family a consistent three-night binge of what we call a “tray of something” dinner.

This usually consists of some freezer-burned combination of chicken nuggets, waffle fries, fish sticks and the stray mozzarella stick I found rolling around the bottom of the freezer, most likely an escapee from the last bag I bought. If I’m feeling up to it, I might just throw a bag of frozen veggies into the microwave. I know what you’re thinking: Man, she’s got it all together.

And with the current heat wave we’re experiencing, (wait … is that … could it be … the sun?) the last thing I want to be doing is meal planning, prepping and standing over a stove. But, I do believe in tricking my child into eating at least one vegetable a day, (he’s still waiting to turn green like a Ninja Turtle, by the way) so I’ll definitely be making food writer Francesca Olsen’s easy butternut squash pasta dish with a sagey sausage mixed in. Or maybe this 20-minute Thai chicken curry soup, which I’ll serve over my 90-second bag rice.
