The Meat

Good morning, foodie friends.

It might be the Wednesday after Labor Day, but I’m still feeling the effects of too much fun, food, laughter and *cough* wine from the three-day weekend. At this moment, I’m sitting at my keyboard guzzling water and popping Tums in an effort to return my body’s equilibrium. 

But, as they say, it was all worth it. More than 10 years ago, I met a group of women when working at our college newspaper. We pulled late nights in the office, missed a few deadlines, ate countless slices of pizza and learned about journalism and even more about friendship. To this day, they are my home base. We live all across the Northeast, working for newspapers and magazines of all sizes. We’ve danced at each other’s weddings, held babies and, sadly, made house calls when serious illness knocked at our doors. 

For the first time, however, we decided to rent a house over the long weekend and throw all of our families together for shared meals, bedtime routines and chats around the fire. Eleven adults and two children plus one large kitchen made me slightly nervous, but what happened was not only fun, but delicious. There was a French toast bake, homemade queso dip that I’m currently hunting down the recipe for, hotdogs and hamburgers, one delicious chocolate birthday cake for my husband, and a thrown-together peach cobbler. 

Somehow, I ended up with the rest of the peaches that weren’t eaten in the fridge cleanout Monday morning. Feeling inspired by the delicious cobbler we ate Friday night, I decided to try one myself. I found this recipe for a super simple one that didn’t require me to peel the peaches, which I did not have the energy for, quite frankly. 

I still have a few more peaches, and little energy, so tonight, I may use up the rest with Francesca Olsen’s Peach and Rosemary Focaccia. And don’t worry, the second I get that queso dip recipe, I’ll let you all know.
